Lentil Falafel Wraps with Za’atar Yogurt Sauce are a delicious and healthy meal option, combining crispy lentil falafels with a flavorful yogurt sauce.

- 1 cup lentils, rinsed
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/4 cup flour
- Oil for frying
- 4 whole wheat wraps
- 1 cup Greek yogurt
- 1 tbsp za’atar spice
- 1 tbsp lemon juice
Instructions
- Cook lentils in boiling water until tender, about 20 minutes. Drain and let cool.
- In a food processor, combine lentils, onion, garlic, parsley, cumin, coriander, salt, black pepper, and cayenne. Pulse until combined.
- Add flour to the mixture and pulse until a dough forms.
- Shape the mixture into small balls or patties.
- Heat oil in a frying pan over medium heat and fry the falafels until golden brown on all sides.
- In a bowl, mix Greek yogurt, za’atar, and lemon juice to make the sauce.
- Assemble the wraps by placing falafels in the whole wheat wraps and drizzling with za’atar yogurt sauce.
- Serve immediately and enjoy!
Notes
- For a healthier option, bake the falafels instead of frying.
- Feel free to add your favorite vegetables to the wraps.
- Za’atar can be adjusted to taste.
