Description

A hearty mix of tender potatoes, browned ground beef, and creamy melted cheddar, all cooked in one skillet for a comforting meal.


Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1/2 cup green onions, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add 1 pound of ground beef and cook until browned.
  3. Toss in the diced potatoes, garlic powder, onion powder, and season with salt and pepper.
  4. Cook the mixture for about 15-20 minutes, stirring occasionally until the potatoes are tender.
  5. Stir in 1 cup of shredded cheddar cheese and 1/2 cup of sour cream until melted.
  6. Sprinkle with 1/2 cup of chopped green onions before serving.

Notes

Make ahead by dicing potatoes and prepping beef the night before. Can also be baked in the oven at 400°F for 30 minutes.
