Ingredients

- 1 lb ground beef
- 4 medium potatoes, diced
- 1 cup cheddar cheese, shredded
- 1/2 cup sour cream
- 1/2 cup green onions, chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add 1 pound of ground beef and cook until browned.
- Toss in the diced potatoes, garlic powder, onion powder, and season with salt and pepper.
- Cook the mixture for about 15-20 minutes, stirring occasionally until the potatoes are tender.
- Stir in 1 cup of shredded cheddar cheese and 1/2 cup of sour cream until melted.
- Sprinkle with 1/2 cup of chopped green onions before serving.
Notes
Make ahead by dicing potatoes and prepping beef the night before. Can also be baked in the oven at 400°F for 30 minutes.
