- 2 large sweet potatoes
- 1 can black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or your choice)
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
- Avocado slices (optional)
- Sour cream or Greek yogurt (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork.
- Rub the sweet potatoes with olive oil, cumin, paprika, salt, and pepper.
- Bake the sweet potatoes in the oven for 45-60 minutes, or until tender.
- While the sweet potatoes are baking, heat the black beans in a saucepan over medium heat.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
- Slice the sweet potatoes open and fluff the insides with a fork.
- Top each sweet potato with black beans, shredded cheese, and any additional toppings you desire.
- Garnish with fresh cilantro and serve with avocado slices and sour cream if desired.
