Description

A classic Louisiana dish featuring red beans and rice, slow-cooked with spices and smoked sausage for a hearty meal.


Ingredients

  • 1 pound red beans
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 pound smoked sausage, sliced
  • 6 cups water
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 4 cups cooked white rice

Instructions

  1. Soak the red beans overnight in water.
  2. In a large pot, sauté the onion, bell pepper, celery, and garlic until softened.
  3. Add the sliced sausage and cook until browned.
  4. Drain the soaked beans and add them to the pot along with water, bay leaves, thyme, cayenne pepper, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 2 hours, or until beans are tender.
  6. Remove bay leaves and serve the beans over cooked rice.

Notes

  • For a vegetarian version, omit the sausage and use vegetable broth.
  • Adjust the spice level by adding more or less cayenne pepper.
  • This dish tastes even better the next day as the flavors meld.
