Description
A classic Louisiana dish featuring red beans and rice, slow-cooked with spices and smoked sausage for a hearty meal.
Ingredients

- 1 pound red beans
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 pound smoked sausage, sliced
- 6 cups water
- 2 bay leaves
- 1 teaspoon thyme
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- 4 cups cooked white rice
Instructions
- Soak the red beans overnight in water.
- In a large pot, sauté the onion, bell pepper, celery, and garlic until softened.
- Add the sliced sausage and cook until browned.
- Drain the soaked beans and add them to the pot along with water, bay leaves, thyme, cayenne pepper, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 2 hours, or until beans are tender.
- Remove bay leaves and serve the beans over cooked rice.
Notes
- For a vegetarian version, omit the sausage and use vegetable broth.
- Adjust the spice level by adding more or less cayenne pepper.
- This dish tastes even better the next day as the flavors meld.
