A lighter twist on traditional lasagna, these Low-Carb Zucchini Roll-Ups are filled with savory ground beef, creamy ricotta, and melted mozzarella, perfect for a comforting meal without the guilt.

- 3 large zucchini (sliced into thin ribbons)
- 1 lb lean ground beef (or Italian sausage)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 cups marinara sauce
- 1 cup ricotta cheese (or cottage cheese)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- Fresh parsley, finely chopped
Instructions
- Prep zucchini: Slice the zucchini into thin ribbons using a mandoline or vegetable peeler. Lay on paper towels, sprinkle with salt, and let sit for 10 minutes. Pat dry.
- Cook the filling: In a skillet over medium heat, brown the ground beef with onion and garlic for 5-7 minutes. Drain fat, stir in ½ cup marinara sauce, and season with salt and pepper.
- Assemble the roll-ups: Lay out 2-3 overlapping zucchini slices, spread ricotta along, add beef mixture and mozzarella, then roll tightly.
- Arrange in a baking dish: Pour remaining marinara into the dish, place roll-ups upright, top with mozzarella and parmesan.
- Bake at 190°C (375°F) for 20-25 minutes until cheese is bubbly and golden. Garnish with parsley before serving.
Notes
Make-ahead by assembling roll-ups and refrigerating for up to 24 hours before baking. Can also be made in an air fryer for a quicker, crispy version.
