Ingredients

- 4 chicken breasts
- 1/2 cup maple syrup
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups carrots, chopped
- 2 cups parsnips, chopped
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix maple syrup, soy sauce, Dijon mustard, garlic powder, salt, and pepper.
- Marinate the chicken breasts in the maple mixture for at least 30 minutes.
- While the chicken is marinating, toss the chopped carrots and parsnips with olive oil, thyme, salt, and pepper.
- Spread the vegetables on a baking sheet and roast in the oven for 20 minutes.
- Add the marinated chicken to the baking sheet and roast for an additional 25-30 minutes, or until the chicken is cooked through.
- Serve the chicken with the roasted root veggies.

- For extra flavor, let the chicken marinate overnight.
- Feel free to substitute other root vegetables like sweet potatoes or beets.
- Ensure the chicken reaches an internal temperature of 165°F (75°C).
