Ingredients

  • 2 cups carrots, chopped
  • 2 cups parsnips, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix maple syrup, soy sauce, Dijon mustard, garlic powder, salt, and pepper.
  3. Marinate the chicken breasts in the maple mixture for at least 30 minutes.
  4. While the chicken is marinating, toss the chopped carrots and parsnips with olive oil, thyme, salt, and pepper.
  5. Spread the vegetables on a baking sheet and roast in the oven for 20 minutes.
  6. Add the marinated chicken to the baking sheet and roast for an additional 25-30 minutes, or until the chicken is cooked through.
  7. Serve the chicken with the roasted root veggies.
