Ingredients

  • 4 salmon fillets
  • 1/4 cup maple syrup
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1 pound Brussels sprouts, halved
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together maple syrup, soy sauce, olive oil, garlic powder, and ginger.
  3. Place the Brussels sprouts on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat.
  4. Roast the Brussels sprouts in the oven for 15 minutes.
  5. After 15 minutes, remove the baking sheet and push the Brussels sprouts to the side. Place the salmon fillets on the baking sheet and brush with the maple soy glaze.
  6. Return to the oven and roast for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Serve the salmon with the roasted Brussels sprouts and drizzle any remaining glaze over the top.

Notes

  • For extra flavor, marinate the salmon in the glaze for 30 minutes before cooking.
  • Feel free to add other vegetables to the roasting pan, such as carrots or sweet potatoes.
  • Adjust the sweetness of the glaze by adding more or less maple syrup according to your taste.
