A delicious and healthy recipe for Maple Soy Glazed Salmon served with roasted Brussels sprouts, perfect for a quick weeknight dinner.

- 4 salmon fillets
- 1/4 cup maple syrup
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 1 pound Brussels sprouts, halved
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon ginger, grated
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together maple syrup, soy sauce, olive oil, garlic powder, and ginger.
- Place the Brussels sprouts on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat.
- Roast the Brussels sprouts in the oven for 15 minutes.
- After 15 minutes, remove the baking sheet and push the Brussels sprouts to the side. Place the salmon fillets on the baking sheet and brush with the maple soy glaze.
- Return to the oven and roast for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve the salmon with the roasted Brussels sprouts and drizzle any remaining glaze over the top.
Notes
- For extra flavor, marinate the salmon in the glaze for 30 minutes before cooking.
- Feel free to add other vegetables to the roasting pan, such as carrots or sweet potatoes.
- Adjust the sweetness of the glaze by adding more or less maple syrup according to your taste.
