- 4 salmon fillets (about 6 oz / 170 g each)
- 2 tbsp extra virgin olive oil
- 3 garlic cloves, minced
- 4 cups baby spinach
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- Juice of 1/2 lemon
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh basil, chopped
- Lemon wedges, for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the olive oil, minced garlic, spinach, cherry tomatoes, sliced red onion, and seasonings in a large baking dish. Toss until everything is well mixed.
- Nestle the salmon fillets atop the vegetable mixture and drizzle fresh lemon juice over them.
- Pile shredded mozzarella and Parmesan cheese on each fillet.
- Bake for 15–20 minutes, or until the salmon flakes easily with a fork and the cheese is bubbly.
- Garnish with fresh parsley and basil before serving, alongside lemon wedges.

Make ahead by prepping ingredients a few hours in advance and store separately in the fridge before baking.
