A delicious and healthy Mediterranean-inspired dish featuring chicken bowls topped with tzatziki meatballs.

- 1 lb chicken breast, diced
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp oregano
- Salt and pepper to taste
- For Tzatziki: 1 cup Greek yogurt, 1/2 cucumber grated, 1 clove garlic minced, 1 tbsp lemon juice, salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix diced chicken with olive oil, garlic powder, oregano, salt, and pepper.
- Spread the chicken on a baking sheet and bake for 20-25 minutes until cooked through.
- While the chicken is baking, prepare the tzatziki by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl.
- In serving bowls, layer cooked quinoa, baked chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- Top each bowl with a generous dollop of tzatziki sauce.
- Serve immediately and enjoy!
Notes
- Feel free to add other vegetables like bell peppers or spinach.
- This dish can be made ahead of time and stored in the refrigerator.
- For a spicier kick, add some red pepper flakes to the chicken seasoning.
