Ingredients

  • 1 lb chicken breast, diced
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp oregano
  • Salt and pepper to taste
  • For Tzatziki: 1 cup Greek yogurt, 1/2 cucumber grated, 1 clove garlic minced, 1 tbsp lemon juice, salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix diced chicken with olive oil, garlic powder, oregano, salt, and pepper.
  3. Spread the chicken on a baking sheet and bake for 20-25 minutes until cooked through.
  4. While the chicken is baking, prepare the tzatziki by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl.
  5. In serving bowls, layer cooked quinoa, baked chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  6. Top each bowl with a generous dollop of tzatziki sauce.
  7. Serve immediately and enjoy!
