- 2 Chicken Breasts
- 2 Medium Zucchinis, sliced
- 1 Red Bell Pepper, diced
- 1 Onion, chopped
- 2 Cloves Garlic, minced
- 1 Teaspoon Dried Oregano
- 1 Teaspoon Dried Basil
- Salt and Pepper to taste
- Olive Oil
- 1 Cup Cherry Tomatoes, halved
- 1/2 Cup Feta Cheese, crumbled
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the chicken breasts, zucchini slices, red bell pepper, onion, garlic, oregano, basil, salt, and pepper with a drizzle of olive oil in a large baking dish.
- Arrange the chicken breasts in the center, surrounding them with vegetables.
- Add the halved cherry tomatoes on top.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F and the vegetables are tender.
- Finish by sprinkling feta cheese over the top.
- Let it rest for a few minutes before serving.
Notes
Make ahead by prepping vegetables a day prior. This dish can also be cooked in an air fryer or slow cooker for different textures.
