Ingredients

  • 2 Chicken Breasts
  • 2 Medium Zucchinis, sliced
  • 1 Red Bell Pepper, diced
  • 1 Onion, chopped
  • 2 Cloves Garlic, minced
  • 1 Teaspoon Dried Oregano
  • 1 Teaspoon Dried Basil
  • Salt and Pepper to taste
  • Olive Oil
  • 1 Cup Cherry Tomatoes, halved
  • 1/2 Cup Feta Cheese, crumbled

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the chicken breasts, zucchini slices, red bell pepper, onion, garlic, oregano, basil, salt, and pepper with a drizzle of olive oil in a large baking dish.
  3. Arrange the chicken breasts in the center, surrounding them with vegetables.
  4. Add the halved cherry tomatoes on top.
  5. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F and the vegetables are tender.
  6. Finish by sprinkling feta cheese over the top.
  7. Let it rest for a few minutes before serving.

Notes

Make ahead by prepping vegetables a day prior. This dish can also be cooked in an air fryer or slow cooker for different textures.
