Ingredients

- 1 can chickpeas, drained and rinsed
- 2 cups fresh spinach
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 lemon, juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Stir in cumin and paprika, cooking for another minute.
- Add diced tomatoes and chickpeas, simmer for 10 minutes.
- Fold in fresh spinach and lemon juice, cooking until spinach wilts.
- Season with salt and pepper to taste.
- Serve warm, garnished with additional lemon if desired.
Notes
- For a spicier version, add red pepper flakes.
