Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 cup olives, pitted and sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Blanch the cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and blanch for 2-3 minutes until fork-tender but still crisp. Drain and rinse under cold water.
  2. Combine the veggies: In a large mixing bowl, combine the olives, halved cherry tomatoes, chopped parsley, and basil.
  3. Make the dressing: In a separate bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and pepper.
  4. Combine everything: Add the blanched cauliflower to the bowl with the vegetables. Pour the dressing over the top.
  5. Toss and marinate: Gently toss everything to combine and let the salad marinate in the fridge for at least 30 minutes before serving.

Notes

Make a day in advance for more robust flavor. Can substitute olives with capers or artichoke hearts.
