Ingredients

- 1 head of cauliflower, cut into florets
- 1 cup olives, pitted and sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Blanch the cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and blanch for 2-3 minutes until fork-tender but still crisp. Drain and rinse under cold water.
- Combine the veggies: In a large mixing bowl, combine the olives, halved cherry tomatoes, chopped parsley, and basil.
- Make the dressing: In a separate bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and pepper.
- Combine everything: Add the blanched cauliflower to the bowl with the vegetables. Pour the dressing over the top.
- Toss and marinate: Gently toss everything to combine and let the salad marinate in the fridge for at least 30 minutes before serving.
Notes
Make a day in advance for more robust flavor. Can substitute olives with capers or artichoke hearts.
