Ingredients

- 12 oz pasta (your choice)
- 2 cups cherry tomatoes, halved
- 1 cup bell peppers, diced
- 1 cup zucchini, diced
- 1/2 cup olives, sliced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 1/2 cup feta cheese, crumbled (optional)
Instructions
- In a large pot, combine the pasta, cherry tomatoes, bell peppers, zucchini, olives, garlic, vegetable broth, oregano, basil, salt, and pepper.
- Bring the mixture to a boil over medium-high heat.
- Reduce the heat to medium-low and cover the pot. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and the liquid is mostly absorbed.
- Remove from heat and stir in the fresh parsley and feta cheese, if using.
- Serve warm and enjoy your Mediterranean feast!
Notes
- Feel free to add any other vegetables you like.
- This dish can be made vegan by omitting the feta cheese.
- Leftovers can be stored in the refrigerator for up to 3 days.
