Description

A delicious and easy Mediterranean One Pot Pasta that combines fresh ingredients and vibrant flavors for a satisfying meal.


Ingredients

  • 12 oz pasta (your choice)
  • 2 cups cherry tomatoes, halved
  • 1 cup bell peppers, diced
  • 1 cup zucchini, diced
  • 1/2 cup olives, sliced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled (optional)

Instructions

  1. In a large pot, combine the pasta, cherry tomatoes, bell peppers, zucchini, olives, garlic, vegetable broth, oregano, basil, salt, and pepper.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce the heat to medium-low and cover the pot. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and the liquid is mostly absorbed.
  4. Remove from heat and stir in the fresh parsley and feta cheese, if using.
  5. Serve warm and enjoy your Mediterranean feast!

Notes

  • Feel free to add any other vegetables you like.
  • This dish can be made vegan by omitting the feta cheese.
  • Leftovers can be stored in the refrigerator for up to 3 days.
