- 4 medium zucchinis
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, chopped
- 1/4 cup red onion, diced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the insides to create boats.
- In a bowl, mix the cooked quinoa, cherry tomatoes, feta cheese, olives, red onion, garlic, oregano, olive oil, salt, and pepper.
- Fill each zucchini boat with the quinoa mixture.
- Place the stuffed zucchinis on a baking sheet and bake for 25-30 minutes until the zucchinis are tender.
- Serve warm and enjoy!

- Feel free to add other vegetables or proteins to the filling.
