Description

Mediterranean Quinoa-Stuffed Zucchini Boats are a delicious and healthy dish filled with quinoa, vegetables, and Mediterranean flavors, perfect for a light meal or side dish.


Ingredients

  • 4 medium zucchinis
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, chopped
  • 1/4 cup red onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides to create boats.
  3. In a bowl, mix the cooked quinoa, cherry tomatoes, feta cheese, olives, red onion, garlic, oregano, olive oil, salt, and pepper.
  4. Fill each zucchini boat with the quinoa mixture.
  5. Place the stuffed zucchinis on a baking sheet and bake for 25-30 minutes until the zucchinis are tender.
  6. Serve warm and enjoy!
