Ingredients

- 8 oz phyllo dough
- 4 cups fresh spinach, chopped
- 8 oz feta cheese, crumbled
- 4 tbsp olive oil
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté chopped onions and minced garlic in olive oil until soft.
- Add fresh spinach and cook until wilted.
- Mix in crumbled feta and herbs, then season with salt and pepper.
- Layer phyllo sheets on a baking tray, brushing each layer with olive oil.
- Place the spinach and feta mixture on one end of the phyllo and roll it up.
- Brush the top with more olive oil.
- Bake for 20-25 minutes or until golden and crispy.
- Allow to cool slightly before slicing and serving.
Notes
You can prepare the filling a day in advance or freeze the unbaked crisps and bake them later.
