Description

Crispy phyllo dough rolls filled with savory spinach and creamy feta, perfect for any occasion.


Ingredients

  • 8 oz phyllo dough
  • 4 cups fresh spinach, chopped
  • 8 oz feta cheese, crumbled
  • 4 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté chopped onions and minced garlic in olive oil until soft.
  3. Add fresh spinach and cook until wilted.
  4. Mix in crumbled feta and herbs, then season with salt and pepper.
  5. Layer phyllo sheets on a baking tray, brushing each layer with olive oil.
  6. Place the spinach and feta mixture on one end of the phyllo and roll it up.
  7. Brush the top with more olive oil.
  8. Bake for 20-25 minutes or until golden and crispy.
  9. Allow to cool slightly before slicing and serving.

Notes

You can prepare the filling a day in advance or freeze the unbaked crisps and bake them later.
