Ingredients

  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Marinate the flank steak in olive oil, red wine vinegar, oregano, salt, and pepper for at least 30 minutes.
  2. Grill the steak over medium-high heat for about 5-7 minutes on each side, or until desired doneness.
  3. Let the steak rest for 5 minutes before slicing it thinly.
  4. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  5. Toss the salad with a drizzle of olive oil and additional salt and pepper if needed.
  6. Top the quinoa salad with the sliced steak and serve immediately.
