A delicious Mediterranean Steak Bowl featuring marinated steak, fresh vegetables, and a zesty dressing.
Ingredients

- 1 lb flank steak
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Marinate the flank steak in olive oil, red wine vinegar, oregano, salt, and pepper for at least 30 minutes.
- Grill the steak over medium-high heat for about 5-7 minutes on each side, or until desired doneness.
- Let the steak rest for 5 minutes before slicing it thinly.
- In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- Toss the salad with a drizzle of olive oil and additional salt and pepper if needed.
- Top the quinoa salad with the sliced steak and serve immediately.
Notes
- For a spicier kick, add some red pepper flakes to the marinade.
- This dish can be served warm or cold.
- Feel free to substitute the steak with chicken or tofu for a different protein option.
