- Beef tenderloin (approximately 2–3 pounds)
- 2–3 cloves garlic, minced
- Fresh herbs (such as rosemary or thyme)
- 1 teaspoon onion powder
Instructions
- Preheat your oven to 400°F (200°C).
- Mix the olive oil, kosher salt, black pepper, minced garlic, and onion powder in a small bowl.
- Rub the mixture all over the beef tenderloin, ensuring even coating.
- Place fresh herbs on top of the tenderloin.
- Heat a skillet over high heat and sear the tenderloin on all sides for 2-3 minutes.
- Transfer the skillet to the oven and roast for 20-30 minutes until the internal temperature reaches 135°F for medium-rare.
- Let the roast rest for 10-15 minutes before slicing and serving.
Notes
For added flavor, marinate the tenderloin a day in advance. Serve with garlic mashed potatoes or roasted vegetables.
