- 1 cup chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/2 cup brewed coffee, cooled
- 1 cup cherry pie filling
- 1/2 cup semi-sweet chocolate, melted
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix chocolate cookie crumbs with melted butter and press into the bottom of a pie dish.
- Bake the crust for 10 minutes, then let it cool.
- In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form.
- In another bowl, combine cooled coffee, melted chocolate, and vanilla extract.
- Gently fold the whipped cream into the chocolate mixture until well combined.
- Pour the mousse into the cooled crust and spread evenly.
- Top with cherry pie filling and refrigerate for at least 4 hours before serving.
Notes
- For a stronger coffee flavor, use espresso instead of brewed coffee.
- Make sure the chocolate is fully melted for a smooth mousse.
- Garnish with chocolate shavings or additional cherries if desired.
