- 4 large eggs
- 1/4 cup brewed coffee

- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 tablespoon instant coffee granules
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix flour, sugar, cocoa powder, baking powder, and salt.
- In another bowl, beat eggs, then add coffee and vanilla extract.
- Combine the wet and dry ingredients until smooth.
- Pour the batter onto the prepared baking sheet and spread evenly.
- Bake for 12-15 minutes or until a toothpick comes out clean.
- Once baked, let it cool slightly, then roll it up in the parchment paper and let it cool completely.
- For the filling, whip the heavy cream, powdered sugar, and instant coffee until stiff peaks form.
- Unroll the cake, spread the cream filling, and roll it back up.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- Make sure to roll the cake while it’s still warm to prevent cracking.
- Feel free to add chocolate shavings on top for decoration.
- This cake can be made a day in advance for better flavor.
