  • 4 large eggs
  • 1/4 cup brewed coffee
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tablespoon instant coffee granules

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, beat eggs, then add coffee and vanilla extract.
  4. Combine the wet and dry ingredients until smooth.
  5. Pour the batter onto the prepared baking sheet and spread evenly.
  6. Bake for 12-15 minutes or until a toothpick comes out clean.
  7. Once baked, let it cool slightly, then roll it up in the parchment paper and let it cool completely.
  8. For the filling, whip the heavy cream, powdered sugar, and instant coffee until stiff peaks form.
  9. Unroll the cake, spread the cream filling, and roll it back up.
  10. Chill in the refrigerator for at least 1 hour before serving.
