- ¼ tsp ground ginger
- ½ tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and prepare your muffin tin by greasing it or lining it with paper liners.
- Mix the dry ingredients: In a large mixing bowl, whisk together flour, baking powder, baking soda, spices, and salt.
- Combine the wet ingredients: In another bowl, beat together pumpkin puree, sugar, eggs, and melted butter until smooth.
- Incorporate the mixtures by gradually adding the dry ingredients into the wet mixture, folding until just combined.
- Scoop the batter into each muffin cup about two-thirds full.
- Bake for 20-25 minutes until a toothpick comes out clean.
- Cool the muffins in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For a vegan version, substitute eggs with flax eggs and use plant-based milk. Add chocolate chips or nuts for extra flavor.
