Description

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your muffin tin by greasing it or lining it with paper liners.
  2. Mix the dry ingredients: In a large mixing bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  3. Combine the wet ingredients: In another bowl, beat together pumpkin puree, sugar, eggs, and melted butter until smooth.
  4. Incorporate the mixtures by gradually adding the dry ingredients into the wet mixture, folding until just combined.
  5. Scoop the batter into each muffin cup about two-thirds full.
  6. Bake for 20-25 minutes until a toothpick comes out clean.
  7. Cool the muffins in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For a vegan version, substitute eggs with flax eggs and use plant-based milk. Add chocolate chips or nuts for extra flavor.
