Description

A delicious and easy no-bake cheesecake made with Biscoff cookies and cream cheese, perfect for dessert lovers.


Ingredients

Scale
  • 200g Biscoff cookies
  • 100g unsalted butter, melted
  • 400g cream cheese
  • 100g powdered sugar
  • 200ml heavy cream
  • 100g Biscoff spread

Instructions

  1. Crush the Biscoff cookies into fine crumbs.
  2. Mix the cookie crumbs with melted butter until well combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a bowl, beat the cream cheese and powdered sugar until smooth.
  5. In another bowl, whip the heavy cream until stiff peaks form.
  6. Fold the whipped cream into the cream cheese mixture gently.
  7. Add the Biscoff spread and mix until well combined.
  8. Pour the cheesecake filling over the crust and smooth the top.
  9. Refrigerate for at least 4 hours or until set.
  10. Serve chilled, optionally topped with more Biscoff spread or cookie crumbs.

Notes

  • For a stronger Biscoff flavor, add more Biscoff spread to the filling.
  • Make sure the cream cheese is at room temperature for easier mixing.
  • This cheesecake can be made a day in advance for convenience.
