- 2 cups granola
- 1/4 cup melted coconut oil
- 1/4 cup honey or maple syrup
- 1 cup Greek yogurt
- 1 teaspoon vanilla extract
- 2 cups mixed fresh fruits (such as berries, kiwi, and banana)
Instructions
- In a mixing bowl, combine granola, melted coconut oil, and honey or maple syrup until well mixed.
- Press the granola mixture into the bottom and up the sides of a tart pan to form the crust.
- In another bowl, mix Greek yogurt and vanilla extract until smooth.
- Spread the yogurt mixture evenly over the granola crust.
- Top with mixed fresh fruits, arranging them as desired.
- Refrigerate for at least 1 hour before serving to set.
