- 1 lb fresh fish (such as haddock or cod), cut into chunks
- 1 lb shrimp, peeled and deveined
- 1 cup scallops
- 4 cups fish stock
- 2 cups heavy cream
- 1 cup diced potatoes
- 1 cup diced onions
- 1 cup diced celery
- 1 cup corn (fresh or frozen)
- 2 cloves garlic, minced
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the onions, celery, and garlic, and sauté until softened.
- Add the diced potatoes and fish stock to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
- Stir in the heavy cream, corn, and seafood (fish, shrimp, and scallops). Cook until the seafood is cooked through, about 5-7 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
- For a thicker chowder, you can add a roux made from flour and butter.
- Feel free to substitute any seafood based on availability.
- This chowder can be made ahead of time and reheated before serving.
