- 4 boneless, skinless chicken breasts
- 1 bunch asparagus, trimmed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup plain Greek yogurt
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon juice
- 1 clove garlic, minced
Instructions
- Preheat the oven to 400°F (200°C).
- In a large baking dish, place the chicken breasts and asparagus.
- Drizzle with olive oil and season with salt and pepper.
- Bake for 25-30 minutes, or until the chicken is cooked through.
- While the chicken is baking, prepare the herbed yogurt sauce by mixing Greek yogurt, dill, lemon juice, and garlic in a bowl.
- Once the chicken is done, serve it with the asparagus and drizzle the herbed yogurt sauce on top.
Notes
- For extra flavor, marinate the chicken in olive oil, lemon juice, and herbs for a few hours before cooking.
- This dish can be served with rice or quinoa for a complete meal.
