- 8 oz mushrooms, sliced
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup spinach, chopped
- 1/2 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a large skillet, cook the Italian sausage over medium heat until browned.
- Add the sliced mushrooms and garlic, cooking until the mushrooms are tender.
- Stir in the orzo and chicken broth, bringing to a boil.
- Reduce heat and simmer until the orzo is cooked, about 10 minutes.
- Stir in the heavy cream, spinach, and Parmesan cheese until well combined.
- Season with salt and pepper to taste, then serve warm.
Notes
- For a lighter version, use turkey sausage.
- Feel free to add other vegetables like bell peppers or peas.
