Description

A delicious and easy one-pan meal featuring Greek lemon chicken, tender potatoes, and crisp green beans, perfect for a weeknight dinner.


Ingredients

  • 4 chicken thighs
  • 2 large potatoes, cut into wedges
  • 200g green beans, trimmed
  • 3 tablespoons olive oil
  • 2 lemons, juiced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper.
  3. Add chicken thighs to the bowl and coat them well with the marinade.
  4. In a baking dish, arrange the potato wedges and pour half of the marinade over them.
  5. Place the marinated chicken thighs on top of the potatoes.
  6. Pour the remaining marinade over the chicken and add the green beans around the dish.
  7. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are tender.
  8. Serve hot and enjoy!

Notes

  • For extra flavor, marinate the chicken for a few hours or overnight.
  • Feel free to add other vegetables like bell peppers or carrots.
