A delicious and easy one-pan meal featuring Greek lemon chicken, tender potatoes, and crisp green beans, perfect for a weeknight dinner.

- 4 chicken thighs
- 2 large potatoes, cut into wedges
- 200g green beans, trimmed
- 3 tablespoons olive oil
- 2 lemons, juiced
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Add chicken thighs to the bowl and coat them well with the marinade.
- In a baking dish, arrange the potato wedges and pour half of the marinade over them.
- Place the marinated chicken thighs on top of the potatoes.
- Pour the remaining marinade over the chicken and add the green beans around the dish.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are tender.
- Serve hot and enjoy!
Notes
- For extra flavor, marinate the chicken for a few hours or overnight.
- Feel free to add other vegetables like bell peppers or carrots.
- Leftovers can be stored in the refrigerator for up to 3 days.
