- 4 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts generously with salt and pepper. Add them to the skillet, cooking for about 5-7 minutes on each side until golden brown and cooked through.
- Set the chicken aside on a plate.
- Prepare the sauce by pouring in the balsamic vinegar and adding the halved cherry tomatoes. Cook for about 3-4 minutes.
- Combine the cooked chicken back into the skillet, topping with shredded mozzarella. Cover and let simmer for another 2-3 minutes until the cheese is melted.
- Garnish with chopped basil before serving.
