A delicious and easy one-pot meal featuring creamy pesto orzo and a variety of fresh vegetables.
Ingredients

- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 cup heavy cream
- 1/2 cup pesto
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1/2 cup bell peppers, diced
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large pot, combine the orzo and vegetable broth. Bring to a boil over medium heat.
- Reduce heat and simmer for about 10 minutes, stirring occasionally, until the orzo is tender.
- Add the heavy cream and pesto to the pot, stirring to combine.
- Mix in the cherry tomatoes, spinach, and bell peppers. Cook for an additional 5 minutes until the vegetables are tender.
- Stir in the grated Parmesan cheese and season with salt and pepper to taste.
- Serve warm and enjoy your creamy pesto orzo!
