Ingredients

  • 1 cup heavy cream
  • 1/2 cup pesto
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the orzo and vegetable broth. Bring to a boil over medium heat.
  2. Reduce heat and simmer for about 10 minutes, stirring occasionally, until the orzo is tender.
  3. Add the heavy cream and pesto to the pot, stirring to combine.
  4. Mix in the cherry tomatoes, spinach, and bell peppers. Cook for an additional 5 minutes until the vegetables are tender.
  5. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
