- 1 bell pepper, chopped
- 1 zucchini, chopped
- 2 cups spinach
- 2 cups chicken broth
- Salt and pepper to taste
- Herbs and spices (basil, oregano, paprika) to taste
- Olive oil for sautéing
Instructions
- Sauté the aromatics: In your heavy-bottomed pot, heat a drizzle of olive oil over medium heat. Add finely chopped onion and minced garlic. Stir until they soften and release their aroma, about 3–4 minutes.
- Cook the chicken: Season the thin chicken breasts with salt and pepper. Add them to the pot, cooking them for approximately 2-3 minutes per side until they’re golden brown.
- Add the vegetables: Toss in chopped bell pepper and zucchini. Stir well to coat them in the lingering flavors.
- Create the sauce: Pour in the chicken broth and add your desired herbs and spices.
- Simmer: Reduce the heat, cover the pot, and let it simmer for around 15 minutes.
- Finish with greens: In the final few minutes, stir in a handful of spinach until it wilts down.
- Serve: Scoop the meal into bowls, making sure to get a little bit of everything in each serving.
Notes
