Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the orzo and toast for 2-3 minutes until slightly golden.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the cherry tomatoes and season with salt and pepper.
  5. Reduce heat and simmer for about 10 minutes, stirring occasionally, until the orzo is cooked and the liquid is absorbed.
  6. Remove from heat and stir in the mozzarella and basil.
  7. Let it sit for a few minutes to allow the cheese to melt slightly before serving.
