- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the orzo and toast for 2-3 minutes until slightly golden.
- Pour in the vegetable broth and bring to a boil.
- Add the cherry tomatoes and season with salt and pepper.
- Reduce heat and simmer for about 10 minutes, stirring occasionally, until the orzo is cooked and the liquid is absorbed.
- Remove from heat and stir in the mozzarella and basil.
- Let it sit for a few minutes to allow the cheese to melt slightly before serving.
