- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 can (14 oz) artichoke hearts, drained and chopped
- 1 cup vegetable broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in the orzo and cook for 1-2 minutes.
- Add vegetable broth and bring to a boil.
- Reduce heat and simmer until orzo is tender, about 10 minutes.
- Stir in the heavy cream, spinach, artichokes, and Parmesan cheese.
- Cook until the spinach is wilted and the sauce is creamy.
- Season with salt and pepper to taste.

- For a lighter version, substitute heavy cream with half-and-half.
