- 1 medium head of cabbage
- 1 cup cooked quinoa
- 1 cup grated carrots
- 1/2 cup chopped onions
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1 egg (or flax egg for vegan option)
Instructions
- Preheat the oven to 375°F (190°C).
- Remove the core from the cabbage and carefully separate the leaves.
- In a large bowl, combine cooked quinoa, grated carrots, chopped onions, minced garlic, cumin, paprika, salt, pepper, breadcrumbs, parsley, and egg.
- Mix well until all ingredients are combined.
- Take a cabbage leaf and place a generous amount of the mixture in the center, folding the sides over to create a burger shape.
- Place the cabbage burgers on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, or until the cabbage is tender and the burgers are golden brown.
- Serve warm with your favorite sauce or toppings.
Notes
- For a vegan option, substitute the egg with a flax egg.
- Feel free to add other vegetables or spices to the mixture for extra flavor.
