  • 1 pound breakfast sausage
  • 8 large eggs
  • 2 cups milk
  • 2 cups pancake mix
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the breakfast sausage over medium heat until browned and cooked through. Drain excess fat.
  3. In a large bowl, whisk together the eggs, milk, maple syrup, and vanilla extract.
  4. Add the pancake mix, baking powder, and salt to the egg mixture, stirring until just combined.
  5. Grease a 9×13 inch baking dish and spread the cooked sausage evenly on the bottom.
  6. Pour the pancake batter over the sausage, spreading it evenly.
