- 1 cup of crushed biscuits
- 1/2 cup of unsalted butter, melted
- 1 can (395g) of sweetened condensed milk
- 1/2 cup of fresh lemon juice
- 1/2 cup of passionfruit pulp
- 1/4 cup of icing sugar
- 1/2 teaspoon of vanilla extract
Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the crushed biscuits with melted butter until well combined.
- Press the biscuit mixture into the base of a greased baking dish.
- In another bowl, whisk together the condensed milk, lemon juice, passionfruit pulp, icing sugar, and vanilla extract until smooth.
- Pour the mixture over the biscuit base and spread evenly.
- Bake in the preheated oven for 20-25 minutes or until set.
- Allow to cool, then refrigerate for at least 2 hours before serving.
- Cut into squares and serve chilled.
Notes
- For a stronger passionfruit flavor, add more pulp.
- Can be topped with whipped cream for extra indulgence.
- Store leftovers in the refrigerator for up to 3 days.
