Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh peaches, sliced
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. In another bowl, toss the peach slices with lemon juice.
  7. Grease a muffin tin and place a slice of peach in the bottom of each cup.
  8. Spoon the cookie dough over the peach slices, filling each cup about 2/3 full.
  9. Bake for 15-20 minutes or until the cookies are golden brown.
  10. Allow to cool for a few minutes before inverting onto a wire rack.

Notes
