A delicious and spicy Peri-Peri Chicken Sub Roll that is bursting with flavor, perfect for a quick meal or snack.
Ingredients

- 2 chicken breasts
- 2 tablespoons peri-peri sauce
- 4 sub rolls
- 1 cup lettuce, shredded
- 1 tomato, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup mayonnaise
- Salt and pepper to taste
Instructions
- Marinate the chicken breasts in peri-peri sauce for at least 30 minutes.
- Preheat the grill or skillet over medium heat.
- Cook the chicken for 6-7 minutes on each side or until fully cooked.
- While the chicken is cooking, prepare the sub rolls by slicing them open.
- Spread mayonnaise on the inside of each roll.
- Once the chicken is cooked, slice it into strips.
- Assemble the sub rolls by adding lettuce, tomato, red onion, and chicken strips.
- Season with salt and pepper to taste.
- Close the rolls and serve immediately.
Notes
- For extra heat, add more peri-peri sauce to the chicken or as a topping.
- Feel free to customize the toppings with your favorite vegetables.
- This recipe can be made with grilled or baked chicken.
