Description

A delicious and vibrant dish featuring orzo pasta tossed with fresh pesto, roasted cherry tomatoes, and creamy feta cheese.


Ingredients

  • 1 cup orzo pasta
  • 2 cups cherry tomatoes
  • 1/4 cup pesto
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Roast the tomatoes in the oven for 20-25 minutes until they are blistered.
  4. Meanwhile, cook the orzo according to package instructions until al dente.
  5. Drain the orzo and return it to the pot.
  6. Add the roasted tomatoes and pesto to the orzo, stirring to combine.
  7. Top with crumbled feta cheese before serving.

Notes

  • For a vegan version, omit the feta cheese or use a plant-based alternative.
  • This dish can be served warm or cold as a pasta salad.
