Pineapple Coconut Dream Poke Cake is a delightful dessert that combines the tropical flavors of pineapple and coconut in a moist, fluffy cake. It’s perfect for summer gatherings or any occasion that calls for a sweet treat.

Ingredients

Scale
  • 1 box yellow cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 can (20 oz) crushed pineapple, undrained
  • 1 package (3.4 oz) instant coconut cream pudding mix
  • 1 cup sweetened shredded coconut
  • 1 cup whipped topping
  • 1/2 cup sweetened condensed milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the yellow cake mix according to package instructions using water, oil, and eggs.
  3. Pour the batter into a greased 9×13 inch baking dish and bake for 25-30 minutes or until a toothpick comes out clean.
  4. Once baked, remove the cake from the oven and let it cool for 10 minutes.
  5. Using the handle of a wooden spoon, poke holes all over the top of the cake.
  6. In a bowl, mix the crushed pineapple with its juice and the sweetened condensed milk, then pour this mixture over the cake, ensuring it fills the holes.
  7. In another bowl, combine the coconut cream pudding mix with milk and whisk until thickened.
  8. Spread the pudding mixture over the cake, then top with whipped topping and sprinkle with shredded coconut.
  9. Refrigerate for at least 4 hours or overnight before serving.

Notes

  • For a stronger coconut flavor, use coconut milk instead of regular milk in the pudding.
  • This cake can be made a day in advance for better flavor.
  • Garnish with additional pineapple or coconut flakes before serving for a decorative touch.
