Pineapple Shrimp Skewers with Coconut Rice are a delicious and tropical dish that combines succulent shrimp with sweet pineapple, served over creamy coconut rice.

- 1 lb shrimp, peeled and deveined
- 1 cup pineapple chunks
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 cup water
- Salt to taste
- Chopped cilantro for garnish
Instructions
- In a bowl, mix olive oil, soy sauce, honey, and garlic powder. Add shrimp and pineapple chunks, and marinate for 30 minutes.
- While the shrimp is marinating, rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice, coconut milk, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
- Preheat the grill to medium-high heat. Thread the marinated shrimp and pineapple onto skewers.
- Grill the skewers for 2-3 minutes on each side until the shrimp are pink and cooked through.
- Serve the skewers over a bed of coconut rice and garnish with chopped cilantro.
Notes
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Feel free to add bell peppers or onions to the skewers for extra flavor.
- Adjust the sweetness by adding more or less honey according to your taste.
