Description

Pineapple Shrimp Skewers with Coconut Rice are a delicious and tropical dish that combines succulent shrimp with sweet pineapple, served over creamy coconut rice.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup pineapple chunks
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. In a bowl, mix olive oil, soy sauce, honey, and garlic powder. Add shrimp and pineapple chunks, and marinate for 30 minutes.
  2. While the shrimp is marinating, rinse the jasmine rice under cold water until the water runs clear.
  3. In a pot, combine the rinsed rice, coconut milk, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
  4. Preheat the grill to medium-high heat. Thread the marinated shrimp and pineapple onto skewers.
  5. Grill the skewers for 2-3 minutes on each side until the shrimp are pink and cooked through.
  6. Serve the skewers over a bed of coconut rice and garnish with chopped cilantro.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Feel free to add bell peppers or onions to the skewers for extra flavor.
  • Adjust the sweetness by adding more or less honey according to your taste.
