- 1 cup black beans, rinsed and drained
- 1/2 cup peanut butter
- 1/4 cup honey or maple syrup
- 1/4 cup cocoa powder
- 1/2 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a food processor, combine black beans, peanut butter, honey (or maple syrup), cocoa powder, vanilla extract, baking powder, and salt. Blend until smooth.
- Fold in chocolate chips if using.
- Pour the mixture into a greased mini muffin tin.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Let cool before removing from the tin.
Notes
- Store in an airtight container for up to a week.
- These bites can be frozen for longer storage.
