- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 2 cups cream cheese, softened
- 1 cup pumpkin puree
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup rolled oats
- 1/4 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of a greased baking dish.
- In a large mixing bowl, beat cream cheese until smooth. Add pumpkin puree, sugar, eggs, vanilla, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
- Stir in flour until just combined. Pour the pumpkin mixture over the crust in the baking dish.
- In another bowl, combine brown sugar, oats, and chopped pecans. Sprinkle over the pumpkin layer.
- Bake for 45-50 minutes or until the center is set. Let cool before cutting into bars.
Notes
- For a richer flavor, use full-fat cream cheese.
- Store leftovers in the refrigerator for up to 5 days.
- These bars can be frozen for up to 3 months.
