Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 2 cups cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1/4 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of a greased baking dish.
  3. In a large mixing bowl, beat cream cheese until smooth. Add pumpkin puree, sugar, eggs, vanilla, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
  4. Stir in flour until just combined. Pour the pumpkin mixture over the crust in the baking dish.
  5. In another bowl, combine brown sugar, oats, and chopped pecans. Sprinkle over the pumpkin layer.
  6. Bake for 45-50 minutes or until the center is set. Let cool before cutting into bars.
