Instructions
- Preheat the oven: Set your oven to 350°F (175°C) and prepare a muffin tin by lining it with paper liners.
- Mix wet ingredients: In a large bowl, combine the pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Whisk until smooth.
- Combine dry ingredients: In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
- Incorporate wet and dry mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fill muffin cups: Divide the batter among the muffin cups, filling each about 2/3 full.
- Bake to perfection: Bake for 18-22 minutes or until a toothpick comes out clean.
- Prepare the glaze: Mix powdered sugar with milk until smooth.
- Finish with glaze: Drizzle over cooled muffins before serving.
