Description

Delicious and easy-to-make pumpkin pie parfaits layered with creamy whipped cream, perfect for fall celebrations.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 cup crushed graham crackers
  • 1/4 cup chopped pecans (optional)

Instructions

  1. In a bowl, mix pumpkin puree, sugar, pumpkin pie spice, and vanilla extract until well combined.
  2. In another bowl, whip the heavy cream and powdered sugar until soft peaks form.
  3. In serving glasses, layer the pumpkin mixture, followed by a layer of whipped cream, and then a layer of crushed graham crackers.
  4. Repeat the layers until the glasses are filled, finishing with whipped cream on top.
  5. Garnish with chopped pecans if desired.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a lighter version, you can use Greek yogurt instead of heavy cream.
  • Make sure to use pure pumpkin puree, not pumpkin pie filling.
  • These parfaits can be made a day in advance for convenience.
