- 1 cup cottage cheese
- 1 cup pumpkin puree
- 2 eggs
- 1/2 cup honey or maple syrup
- 1 cup whole wheat flour
- 1/2 cup oats
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tbsp pumpkin spice
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the cottage cheese, pumpkin puree, eggs, and honey or maple syrup until well combined.
- In another bowl, combine the whole wheat flour, oats, baking powder, baking soda, pumpkin spice, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack to cool completely.
Notes
- These muffins can be stored in an airtight container for up to a week.
- They can also be frozen for longer storage.
- Feel free to add nuts or chocolate chips for extra flavor.
