  • ¼ cup maple syrup (for drizzle)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. In a separate bowl, combine the ingredients for the streusel: chopped pecans, rolled oats, and melted butter.
  6. Pour half of the cake batter into the prepared pan, sprinkle half of the streusel mixture on top, then add the remaining batter and top with the remaining streusel.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool for 10 minutes before transferring it to a wire rack.
  9. Drizzle with maple syrup before serving.
