Description

Ingredients

  • 1 lb ground meat (beef, turkey, or chicken)
  • 1 cup long-grain white rice or brown rice
  • 2 tablespoons taco seasoning
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 can diced tomatoes (or fresh tomatoes)
  • 2 cups broth or water
  • Optional toppings: shredded cheese, sour cream, avocado, fresh cilantro

Instructions

  1. Prepare ingredients by dicing onions and bell peppers, setting them aside.
  2. Brown the meat in a skillet over medium heat until no longer pink.
  3. Combine in the crockpot by adding cooked meat, rice, diced peppers, onions, taco seasoning, and broth/water.
  4. Cook on low for 4-6 hours or high for 2-3 hours, stirring halfway through.
  5. Check for doneness; fluff with a fork once rice is tender.
  6. Serve with your choice of toppings for added flavor.
