Ingredients

- 1 lb ground meat (beef, turkey, or chicken)
- 1 cup long-grain white rice or brown rice
- 2 tablespoons taco seasoning
- 1 bell pepper, diced
- 1 onion, diced
- 1 can diced tomatoes (or fresh tomatoes)
- 2 cups broth or water
- Optional toppings: shredded cheese, sour cream, avocado, fresh cilantro
Instructions
- Prepare ingredients by dicing onions and bell peppers, setting them aside.
- Brown the meat in a skillet over medium heat until no longer pink.
- Combine in the crockpot by adding cooked meat, rice, diced peppers, onions, taco seasoning, and broth/water.
- Cook on low for 4-6 hours or high for 2-3 hours, stirring halfway through.
- Check for doneness; fluff with a fork once rice is tender.
- Serve with your choice of toppings for added flavor.
Notes
For make-ahead convenience, chop ingredients the night before. Use an Instant Pot for quicker cooking if preferred.
