Description

Ranch Chicken Enchiladas are a delicious twist on traditional enchiladas, featuring tender chicken, creamy ranch dressing, and a blend of cheeses wrapped in soft tortillas.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup ranch dressing
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 small flour tortillas
  • 1 can (10 oz) enchilada sauce
  • 1/2 cup diced green onions
  • 1/2 cup diced tomatoes (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken with ranch dressing and half of the cheese.
  3. Place a portion of the chicken mixture in each tortilla and roll them up.
  4. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  5. Arrange the rolled tortillas seam-side down in the dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  7. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  8. Garnish with diced green onions and tomatoes before serving.

Notes

  • For a spicier version, add jalapeños to the chicken mixture.
  • Can substitute ranch dressing with a homemade version for a fresher taste.
