Ranch Chicken Enchiladas are a delicious twist on traditional enchiladas, featuring tender chicken, creamy ranch dressing, and a blend of cheeses wrapped in soft tortillas.

- 2 cups cooked shredded chicken
- 1 cup ranch dressing
- 1 cup shredded cheese (cheddar or Mexican blend)
- 8 small flour tortillas
- 1 can (10 oz) enchilada sauce
- 1/2 cup diced green onions
- 1/2 cup diced tomatoes (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the shredded chicken with ranch dressing and half of the cheese.
- Place a portion of the chicken mixture in each tortilla and roll them up.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Arrange the rolled tortillas seam-side down in the dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
- Garnish with diced green onions and tomatoes before serving.
Notes
- For a spicier version, add jalapeños to the chicken mixture.
- Can substitute ranch dressing with a homemade version for a fresher taste.
- Leftovers can be stored in the refrigerator for up to 3 days.
