  • 1/2 cup powdered sugar (for crust)
  • 1/2 cup cold butter (for crust)
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your 9×13 inch baking dish.
  2. Prepare the crust by mixing 1 cup of all-purpose flour, powdered sugar, and cold butter until coarse crumbs form. Press firmly into the bottom of the baking dish.
  3. Mix the filling by combining chopped rhubarb with sugar and flour.
  4. Incorporate the whisked eggs, vanilla extract, and melted butter into the rhubarb mixture.
  5. Combine everything by pouring the rhubarb mixture over the prepared crust and spreading it evenly.
  6. Bake for 45-50 minutes, until the custard is set and the top is lightly golden.
