Ingredients

- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 cups mixed greens
- 1 cup cooked quinoa
- 1/2 cup hummus
- 1/4 cup pomegranate seeds
- 1/4 cup toasted pumpkin seeds
- 1 tablespoon balsamic vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed butternut squash with olive oil, salt, and pepper.
- Spread the squash on a baking sheet and roast for 25-30 minutes until tender and caramelized.
- In a large bowl, combine mixed greens, cooked quinoa, and roasted squash.
- Drizzle with balsamic vinegar and toss gently.
- Serve topped with hummus, pomegranate seeds, and toasted pumpkin seeds.
