- 1 bunch of asparagus
- 2 cups of carrots, sliced
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 1 tablespoon of lemon juice
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and trim the asparagus, and slice the carrots.
- In a large bowl, combine the asparagus and carrots with olive oil, garlic powder, salt, and pepper.
- Toss until the vegetables are evenly coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.
- Drizzle with lemon juice before serving.
Notes
- For added flavor, consider sprinkling some grated Parmesan cheese on top before serving.
- Feel free to add other vegetables like bell peppers or zucchini.
